JOB SUMMARY

Clear Path for Veterans, Inc. (CPV or Clear Path), is Upstate New York’s Veteran Resource Center serving as a hub of information, programs and services for veterans and their families. The Sous Chef is responsible for management of all daily kitchen operations such as menu planning, ordering food and maintaining appropriate food inventory levels.  This position works closely with the Culinary Director/Executive Chef in the execution of menus and events.  The Sous Chef also coordinates the work of volunteers and other kitchen staff to perform a variety of culinary-related tasks; The Sous Chef trains and orients volunteers to kitchen operations as needed. 

PRIMARY FUNCTIONS

Provide consistent, effective, hands on leadership with kitchen staff at all times. In the absence of the Executive Chef, assume the kitchen leadership position on all matters needing immediate attention.

 

Fill in for the Executive Chef in planning and directing food preparation when necessary.

 

Assist the Executive Chef in the preparation and design of all food menus.

 

Produce high quality food.

 

Experience with culinary and pastry

 

Comply with and enforce sanitation regulations and safety standards.

 

Maintain a positive and professional approach with coworkers and customers.

 

Maintains working knowledge of kitchen operation’s internal policies/procedures and takes the initiative to convey pertinent information to employees regarding policy changes.

 

Ensures efficiency and accurate performance standards are met.

 

Consistently maintains professional rapport and discretion in communicating with other departments.

 

Takes responsibility for ensuring that employees are trained and oriented in kitchen operations and monitors business flow to develop efficient training, break and shift schedules.

 

Is always willing to assist F&B employees at designated outlet locations as needed.

 

Regularly monitors the inventory of the kitchen supplies and orders supplies as needed.

 

Demonstrates the ability to accurately analyze requisitions while determining adequate quality control measures against product cost.

 

Complete other related duties as assigned.

EDUCATION AND REQUIRED EXPERIENCE

Associate’s Degree in Culinary Arts or related field preferred; two (2) years culinary work experience (fine and casual dining, high volume, boutique, corporate etc.) required.

 

ServSafe Certification.

 

Experience with ordering and managing food inventory; cost containment.

KNOWLEDGE, SKILLS, AND ABILITIES TO CARRY OUT THE POSITION

Dedication to excellent food quality and ensuring our kitchen maintains the highest levels of hygiene and sanitation.

Ability to teach proper food preparation, presentation, cooking methods, and sanitation to volunteers.

Working knowledge of “front of the house” setup and operation.

Ability to work with local farms and other distributors in sourcing the highest quality ingredients.

Excellent interpersonal and communication skills to effectively manage volunteers and kitchen staff.

Flexibility to work well within changing priorities and situations.

Ability to work with a diverse group of people.

Strong time management organizational and prioritization skills; attention to detail.

Writing skills sufficient to draft letters, memos and other professional correspondence.

Computer literate with good MS skills to include Word, Excel and PowerPoint.

ADDITIONAL REQUIREMENTS

Valid New York State driver’s license and must have use of a reliable vehicle.

Will occasionally be required to use own vehicle to pick up supplies and small equipment.

Required to travel daily as needed within New York State in varying weather conditions.

Ability to work a flexible schedule, including nights weekends and holidays as necessary to accommodate for special event attendance.

Must be comfortable with dogs in the workplace.

Job-related Physical Abilities needed in order to perform the job in a satisfactory manner

Must possess speech and hearing sufficient for telephone and in-person communications.  Manual dexterity sufficient for regular use of computer keyboard and other office equipment.  Vision sufficient for frequent use of a computer monitor to write and read documents. This position requires constant physical activity, including reaching, bending, and standing for extended periods of time and the stamina to work extended days, up to 12+ hours occasionally.   Ability to lift up to 50 pounds overhead. Ability to work in extreme hot and cold working environments.
